Baked Oatmeal & 100% Comfort

I can't tell you how many times I've made this in the past 2 months.....
If you like oatmeal, this is for you.
Amazing.
Comforting.
Good for you.
{My kids love, love, love it... and beg for more... }



Baked Oatmeal (adapted from My Kitchen Cafe)


6 cups oatmeal
( I use Quaker Oats Old Fashioned but you can use quick )
2 cups brown sugar
1 cup oil
2 cups milk
4 beaten eggs

1 tsp. vanilla
1 tablespoon baking powder
2 teaspoon salt

Preheat oven to 350 degrees. Mix all ingredients together and pour into a greased 9X13-inch baking pan. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.

  1. Oh yum. Sounds perfect for below zero mornings, here in Wisconsin. One question: Can I use Quick cooking oatmeal or regular?

  5. That is a LOT of oil - kind of negates the healthiness of the oatmeal. Have you tried a substitute?

  6. No, I haven't tried a subsitute, but I think you could try applesauce...

  13. I love the flavor of Oatmeal, but don't like how mushy the quick oats get. Is this more of a crunchy oatmeal once it's baked? Thanks for the recipe.

  17. We love oatmeal. We make what we call DKM oatmeal named after my Dad-it's done in the style that he always ate it. This looks nice-bookmarking it.

  18. Great recipe! I made half the recipe in an 8x8 pan and it turned out perfect. I added pecans for crunch too. It was great to bring the leftovers to work and have a warm breakfast at my desk. : )
