Baked Oatmeal & 100% Comfort

I can't tell you how many times I've made this in the past 2 months.....
If you like oatmeal, this is for you.
Amazing.
Comforting.
Good for you.
{My kids love, love, love it... and beg for more... }



Baked Oatmeal (adapted from My Kitchen Cafe)


6 cups oatmeal
( I use Quaker Oats Old Fashioned but you can use quick )
2 cups brown sugar
1 cup oil
2 cups milk
4 beaten eggs

1 tsp. vanilla
1 tablespoon baking powder
2 teaspoon salt

Preheat oven to 350 degrees. Mix all ingredients together and pour into a greased 9X13-inch baking pan. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.

Oh yum. Sounds perfect for below zero mornings, here in Wisconsin. One question: Can I use Quick cooking oatmeal or regular?

That is a LOT of oil - kind of negates the healthiness of the oatmeal. Have you tried a substitute?

No, I haven't tried a subsitute, but I think you could try applesauce...

I love the flavor of Oatmeal, but don't like how mushy the quick oats get. Is this more of a crunchy oatmeal once it's baked? Thanks for the recipe.

I too love baked oatmeal. Try it with blueberries or banannas or eevn peaches. So good and filling

We love oatmeal. We make what we call DKM oatmeal named after my Dad-it's done in the style that he always ate it. This looks nice-bookmarking it.

Great recipe! I made half the recipe in an 8x8 pan and it turned out perfect. I added pecans for crunch too. It was great to bring the leftovers to work and have a warm breakfast at my desk. : )
