Happy Blue Monday ! Yes, as a matter of fact, this is my breakfast... We had another birthday weekend...My daughter adores Hello Kitty and I went to Michaels and could not find a Hello Kitty cake pan... so I had to come up with plan B. That's what I get for waiting until the last minute !

The good news is this pound cake is delicious ! And even better for 'breakfast' the next morning with a cup of hot coffee !! Maybe my Foodie Friday friends like coconut !

Mississippi Mud Cake

This has been requested as 'birthday cake' for 2 years in a row from one of my sons, so I guess it must be good !
While the 'cake' is not too sweet, the frosting/marshmallow topping is uber sweet, so it balances out. Here's what you need:

I love it the next day best, not sure why.
Mississippi Mud Cake {recipe courtesy of Southern Livings 30 years of our best recipes cookbook.}

1 cup butter or margarine
1/2 cup cocoa
2 cups sugar
4 large eggs, slightly beaten
1 1/2 cups all-purpose flour
1 dash salt
1 teaspoon vanilla extract

4 cups mini marshmallows

Frosting:

1 (16 ounce) package powdered sugar, sifted

1/2 cup milk
1/3 cup cocoa
1/4 cup softened butter or margarine

Directions-
Preheat oven to 350°F.
Lightly grease a 9x13 inch pan.
Melt the butter in a medium saucepan.

Add the cocoa and stir.
Remove from the heat.

Pour butter mixture into a mixing bowl and add sugar and eggs.
Mix until blended.
Add the vanilla.
Mix in the flour and salt.

Spoon batter into a lightly greased 13 x 9 inch pan.

Bake at 350 for 35 minutes.

Remove from oven and sprinkle with marshmallows over hot cake.
Immediately spread frosting over marshmallows on cake. Cool in pan on a wire rack.

Cut into squares to serve. (Chill before slicing for neater squares, but I've always skipped that part !)

My first decorated cake !

I can't belive it. I can actually decorate a cake !
I was getting so sick of buying store cakes, because I just don't enjoy eathing them, that I was determined to make and decorate one for the first time. It was fun, and I'm looking forward to trying this again, now that I know how to do it !
Cake pan by Wilton.

The Princess is having a birthday tomorrow...
It took me 3 hours to decorate the cake !
