Mississippi Mud Cake


This has been requested as 'birthday cake' for 2 years in a row from one of my sons, so I guess it must be good !
While the 'cake' is not too sweet, the frosting/marshmallow topping is uber sweet, so it balances out. Here's what you need:

I love it the next day best, not sure why.
Mississippi Mud Cake {recipe courtesy of Southern Livings 30 years of our best recipes cookbook.}


1 cup butter or margarine
1/2 cup cocoa
2 cups sugar
4 large eggs, slightly beaten
1 1/2 cups all-purpose flour
1 dash salt
1 teaspoon vanilla extract


4 cups mini marshmallows


Frosting:

1 (16 ounce) package powdered sugar, sifted

1/2 cup milk
1/3 cup cocoa
1/4 cup softened butter or margarine


Directions-
Preheat oven to 350°F.
Lightly grease a 9x13 inch pan.
Melt the butter in a medium saucepan.




Add the cocoa and stir.
Remove from the heat.


Pour butter mixture into a mixing bowl and add sugar and eggs.
Mix until blended.
Add the vanilla.
Mix in the flour and salt.


Spoon batter into a lightly greased 13 x 9 inch pan.

Bake at 350 for 35 minutes.


Remove from oven and sprinkle with marshmallows over hot cake.
Immediately spread frosting over marshmallows on cake. Cool in pan on a wire rack.

Cut into squares to serve. (Chill before slicing for neater squares, but I've always skipped that part !)

That looks delicious!My hubby loves choclate and marshmellows (rocky road ice cream is a fav) so I am sure he would love this!! thanks for sharing, does this mean I have to bake now? :)

I can see why this would be requested 2 years in a row! What kid doesn't like chocolate and marshmallows together?!

My son would have loved this cake just as much! He actually didn't even eat his cake! Too much excitement I guess.
