Corn and Herb-Bread Sausage Stuffing

No Fail and simply Fabulous!
Our favorite stuffing...



Corn and Herb-Bread Sausage Stuffing

1 pound bulk pork sausage ( I use Jimmy Dean Sage )

2 cups chopped celery

2 cups chopped onion

5 cups corn bread stuffing mix (about one 12-ounce package)

5 cups herbed-bread stuffing mix

1 teaspoon dried poultry seasoning, crumbled

1 teaspoon dried rubbed sage

1/2 teaspoon pepper

3 cups canned low-salt chicken broth


Preheat oven to 350°F. Butter 13x9x2 glass baking dish. Sauté first 3 ingredients in heavy large skillet over medium-high heat until sausage is brown and vegetables are tender, breaking up sausage with fork, about 15 minutes. Drain off fat. Transfer sausage mixture to large bowl. Add both stuffing mixes, poultry seasoning, sage and pepper and toss until well blended. Gradually mix in broth.


Transfer stuffing to prepared dish. Cover with foil and bake until heated through, about 40 minutes. Uncover and bake until slightly crusty on top, about 5 minutes longer.

Cranberry Fruit Conserve



This is mine.  All mine.
Everyone in my family adores Oceanspray Jellied Cranberry Sauce and they aren't about to convert.  I like it too, but one year I watched Ina Garten make this on her show, and gave it a whirl.  I'm so glad I did.  It' simply amazing. Yum!  {Did I mention it was mine ?}
By the way, our Greenberg Smoked Turkey was out of this world, once again. It makes the most amazing leftovers...smoked turkey sandwiches.....oh my...


Cranberry Fruit Conserve {Barefoot Contessa Parties cookbook)

1 (12-ounce) bag of fresh cranberries, cleaned

1 3/4 cups sugar

1 Granny Smith apple, peeled, cored, and chopped

1 orange, zest grated and juiced

1 lemon, zest grated and juiced

3/4 cup raisins (I did NOT add)

3/4 cup chopped walnuts or pecans (I used pecans!)


Cook the cranberries, sugar, and 1 cup of water in a saucepan over low heat for about 5 minutes, or until the skins pop open. Add the apple, zests, and juices and cook for 15 more minutes. Remove from the heat and add the raisins and nuts. Let cool, and serve chilled
