3 oz ( 1/4 C. plus 2 TBS) light rum
2 oz ( 1/4 C) blue Curacao
1/2 C. unsweetened pineapple juice
1/4 C. well stirred canned cream of coconut such as Coco Lopez
( NOT coconut milk )
3 C. ice cubes
Blend all ingredients in blender til smooth !
Makes 2 drinks

Hell-O. My hubby and I had these on our honeymoon on the Big Island. Holy moly they were good. We were in this cheesy tiki hut themed hole in the wall and these drinks were great. I have never tried to make them, but I think I shall soon. The anniversary is approaching-maybe take a moonlight stroll down memory lane. Course, with it around 0 degrees, might need to bundle up before the walk!
Now all I need is some blue curacao, Coco Lopez, and a plane ticket to someplace balmy!
